How to tell it
Grows in overlapping shelves on trunks and stumps. The caps are shell-shaped, usually grey to blue-grey, with pale gills running down onto a short, off-centre stem.
Where it grows
Mostly on dead or weakened broadleaved trees, including beech, willow and poplar.
In the kitchen
Quick to cook. Fry over fairly high heat so excess water evaporates. Large stems can be tough and are often removed.
Nutrition
Low in calories and a useful source of protein for a fresh mushroom.
